Kebersihan kualitas peralatan makan dipengaruhi oleh proses pencucian, air pencucian dan penyimpanan. Kualitas peralatan makan memenuhi syarat yaitu angka kuman 0 koloni/cm2 sampel dan E.coli(-). Penelitian ini bertujuan mengetahui kualitas bakteriologis pada peralatan makan di Pondok Pesantren Ibnu Mas’ud Puteri.
Jenis penelitian ini deskriptif dengan desain penelitian menggunakan metode cross sectional . Pengumpulan data dilakukan dengan cara observasi dan pemeriksaan laboratorium. Observasi pada tindakan 4 responden dan sampel usap alat diambil 4 piring dan 4 cangkir. Data hasil penelitian dianalisa secara deskriptif dan dibandingkan dengan standar.
Hasil observasi di Pondok Pesantren Ibnu Mas’ud Puteri menunjukkan proses pencucian peralatan makan tergolong kurang baik, dan proses penyimpanan peralatan makan tergolong cukup baik. Hasil pemeriksaan Total Coliform air bersih pada titik 1 tidak memenuhi syarat dan titik 2 memenuhi syarat dibawah 50 CFU/100 mL sampel. Hasil pemeriksaan sampel usap alat makan parameter TPC (angka kuman) terdapat 1 sampel yang tidak memenuhi syarat. Kualitas E.coli peralatan makan memenuhi syarat/negatif.
Untuk meningkatkan kebersihan peralatan makan di Pondok Pesantren Ibnu Mas’ud Puteri, diharapkan santriwati lebih memperhatikan proses pencucian. Pengelola pondok memberikan pemahaman untuk melakukan proses pencucian yang benar, melakukan pengawasan kebersihan tempat pencucian peralatan makan dan pengawasan terhadap pipa saluran air bersih.

Cleanliness of the quality of tableware is influenced by the washing process, washing water and storage. The quality of eating equipment meets the requirements, namely the number of bacteria 0 colonies / cm2 samples and E. coli(-). This study aims to determine the bacteriological quality of tableware at Ibnu Mas'ud Islamic Boarding School.
This type of research is descriptive with research design usingmethod cross sectional . Data collection is done by observation and laboratory examination. Observations on the actions of 4 respondents and the tool swab samples were taken 4 plates and 4 cups. The research data were analyzed descriptively and compared with the standard.
The observations at the Ibnu Mas'ud Islamic Boarding School showed that the washing process of eating equipment was classified as poor, and the process of storing tableware was quite good. The results of examination of Coliform Total clean water at point 1 did not meet the requirements and point 2 fulfilled the requirements under 50 CFU / 100 mL samples. The results of examination of swab samples for TPC parameters (germ numbers) have 1 sample that does not meet the requirements. The quality of E.coli tableware meets the requirements / negatives.
To improve the cleanliness of eating utensils at the Ibn Mas'ud Islamic Boarding School, students are expected to pay more attention to the washing process. The management of the hut provides an understanding to carry out the correct washing process, supervises the cleanliness of the washing equipment for eating utensils and supervises clean water pipes.
