LEMON (Citrus limon (L.) Burm. f.) TERHADAP ANGKA KUMAN

Infused water lemon merupakan salah satu alternatif minuman bagi orang yang tidak sempat mengonsumsi buah atau kurang suka buah dan dapat menjadi alternatif untuk mendorong orang minum air putih lebih banyak. Tujuan penelitian ini untuk mengetahui pengaruh lama penyimpanan minuman infused water lemon terhadap angka kuman. Jenis penelitian adalah Quasi Experiment dengan rancangan One Group Pretest-Postest Design. Sampel penelitian adalah minuman infused water lemon dengan metode TPC. Hasil penelitian, rata-rata jumlah angka kuman tertinggi pada penyimpanan 48 jam pada suhu ruang yaitu 1,28x105, terendah pada 0 jam pada suhu kulkas yaitu 8x100. Penyimpanan dengan suhu ruang selama 36 jam angka kuman 9,51x104 yang berarti melebihi Batas Maksimum Cemaran Mikroba pada sari buah yaitu 1x104 koloni/ml. Sedangkan pada suhu kulkas masih memenuhi batas normal pada semua lama penyimpanan. Jumlah rata-rata angka kuman pada suhu ruang dengan lama penyimpanan 0, 6, 12, 24, 36 dan 48 jam yaitu sebesar 1,1x101, 2,1x101, 2,22x102, 1,52x103, 9,51x104 dan 1,28x105. Sedangkan pada suhu kulkas sebesar 8x100, 1,1x101, 1,32x102, 3,2x101, 2,49x102 dan 1,32x103. Dari hasil uji Kruskall Wallis diperoleh nilai 0,028 disimpulkan bahwa ada pengaruh lama penyimpanan minuman infused water lemon terhadap angka kuman. Bagi masyarakat disarankan menyimpan minuman infused water lemon tidak lebih dari 24 jam pada suhu ruang. Bagi peneliti selanjutnya disarankan untuk mengkombinasikan buah lemon dengan buah lain.

THE OLD EFFECT OF STORAGE OF INFUSED WATER LEMON DRINKS (Citrus limon (L.) Burm. f.) ON THE NUMBERS

Infused water lemon is an alternative drink for people who don't have time to eat fruit or don't like fruit and can be an alternative to encourage people to drink more water. The purpose of this study was to determine the effect of long time storage of infused water lemon drinks on germ numbers. This type of research is Quasi Experiment with the design of One Group Pretest-Postest Design. The research sample was an infused water lemon drink with the TPC method. The results of the study showed that the highest number of germ counts on storage was 48 hours at room temperature of 1,28x105, the lowest at 0 hours at refrigerator temperature of 8x100. Storage with room temperature for 36 hours germs 9,51x104, which means it exceeds the maximum limit of microbial contamination in the juice, which is 1x104 colonies / ml. While the temperature of the refrigerator still meets the normal limits for all storage periods. The average number of germs at room temperature with a storage time of 0, 6, 12, 24, 36 and 48 hours is equal to 1,1x101, 2,1x101, 2,22x102, 1,52x103, 9,51x104 and 1,28x105. Whereas the refrigerator temperature is 8x100, 1,1x101, 1,32x102, 3,2x101, 2,49x102 and 1,32x103. From the results of the Kruskall Wallis test obtained a value of 0,028 concluded that there is a long-standing effect of storing infused water lemon drinks on germ numbers. For people it is recommended to store infused water lemon drinks no more than 24 hours at room temperature. For the next researcher it is recommended to combine lemons with other fruits.
