CURAH YANG DIJUAL DI PASAR TRADISIONAL MARTAPURA

Minyak goreng curah selama ini didistribusikan dalam bentuk tanpa
kemasan, yang berarti minyak goreng curah sebelum digunakan banyak
terpapar oksigen dan kerusakan lemak berlangsung sejak pengolahan
sampai siap dikonsumsi. Hal ini menyebabkan kerusakan minyak dan
meningkatkan Bilangan Peroksida. Bilangan peroksida adalah indeks
jumlah lemak atau minyak yang telah mengalami oksidasi, jika jumlah
peroksida dalam minyak goreng melebihi standar mutu, maka akan
bersifat beracun dan tidak layak dikonsumsi. Batas maksimal kadar
bilangan peroksida pada minyak goreng menurut SNI-3741-2013 yaitu
maksimal 10 meq/kg. Penelitian ini bertujuan untuk mengetahui gambaran
kadar bilangan peroksida minyak goreng curah yang dijual di Pasar
Tradisional Martapura. Jenis penelitian adalah survei deskriptif dengan
rancangan Cross Sectional. Kadar bilangan peroksida ditentukan dengan
Metode Iodometri. Sampel minyak goreng curah diambil dari 15 penjual.
Hasil Penelitian menunjukkan dari 15 sampel minyak goreng curah terdapat
2 sampel yang melebihi nilai mutu bilangan peroksida SNI-3741-2013 dan
terdapat 13 sampel yang memenuhi nilai mutu bilangan peroksida SNI3741-2013. Kesimpulan penelitian kadar bilangan peroksida minyak goreng
curah yang dijual di Pasar Tradisional Martapura yang memenuhi syarat
standar SNI-3741-2013 sebanyak 13 sampel (87%) dan minyak goreng
curah yang melebihi nilai mutu SNI sebanyak 2 sampel (13%). Saran
untuk masyarakat agar selalu lebih berhati-hati dalam membeli dan
mengonsumsi minyak goreng curah yang baik.

DESCRIPTION OF PEROXIDE NUMBER OF BULK COOKING OIL
SOLD AT MARTAPURA TRADITIONAL MARKET

So far, bulk cooking oil is distributed in unpackaged form, which
means that before use, bulk cooking oil is exposed to a lot of oxygen and the
breakdown of fat takes place from processing until it is ready for
consumption. This causes oil breakdown and increases the Peroxide
Number. Peroxide number is an index of the amount of fat or oil that has
been oxidized, if the amount of peroxide in cooking oil exceeds the quality
standard, it will be toxic and unfit for consumption. The maximum limit of
peroxide value in cooking oil according to SNI-3741-2013 is a maximum of
10 meq/kg. This study aims to describe the peroxide value of bulk cooking
oil sold at the Martapura Traditional Market. This type of research is a
descriptive survey with a cross sectional design. Peroxide levels were
determined by the Iodometric Method. Samples of bulk cooking oil were
taken from 15 sellers. The results showed that from 15 samples of bulk
cooking oil there were 2 samples that exceeded the value of the peroxide
value of SNI-3741-2013 and there were 13 samples that met the quality
value of the peroxide number of SNI-3741-2013. The conclusion of this
research is that there are 13 samples (87%) of bulk cooking oil sold in the
Martapura Traditional Market that meet the requirements of the SNI-3741-
2013 standard and 2 samples of bulk cooking oil that exceed the SNI quality
value (13%). Suggestions for the public to always be more careful in buying
and consuming good bulk cooking oil.
