Hasil penelitian menunjukkan kualitas kebersihan peralatan makan pada sebagian besar pedagang makanan tidak memenuhi standar dikarenakan tidak melakukan tahap desinfeksi pada proses pencucian dengan alasan akan menambah waktu dan biaya. Penggunaan bahan alami dianjurkan sebagai pengganti seperti buah belimbing wuluh. Hasil penelitian Septiani, (2017) menunjukkan bahwa bilasan menggunakan larutan belimbing wuluh dapat menurunkan angka kuman pada alat makan.
Tujuan penelitian untuk mengetahui pengaruh konsentrasi larutan belimbing wuluh (Averrhoa bilimbi) terhadap penurunan angka kuman pada peralatan makan. Penelitian ini bersifat Eksperimen dengan desain Pretest postest with control group design. Sampel sebanyak 42 sampel usap alat. Pengumpulan data diperoleh dari hasil observasi dan pemeriksaan angka kuman (TPC). Analisis data menggunakan uji Paired T-test, One Way Anova dilanjutkan Uji Least Significance Different (LSD).
Hasil laboratorium menunjukkan bahwa rata-rata jumlah angka kuman sesudah perlakuan berkisar antara 2.767 - 5.567 koloni/cm² lebih rendah dibandingkan sebelum perlakuan berkisar antara 1.867 - 0 koloni/cm2. Persentase penurunan berkisar antara 42-100%. Konsentrasi 15% mampu menurunkan angka kuman pada mangkuk sebesar 99,7%, konsentrasi 17,5%, 20% dan 22,5% sebesar 100%. Terdapat perbedaan yang bermakna % penurunan angka kuman pada mangkuk dibeberapa konsentrasi larutan belimbing wuluh dengan waktu kontak 3 menit. Dimana konsentrasi 15% memiliki tingkat penurunan terbesar sehingga efektif dijadikan sebagai desinfektan.
Disarankan agar pengelola warung melakukan proses desinfeksi menggunakan larutan belimbing wuluh minimal konsentrasi 15% untuk diaplikasikan, menggunakan air mengalir dan lap sekali pakai. Peneliti selanjutnya dapat melakukan variasi waktu kontak perendaman peralatan makan atau mengembangkan dengan membuat alat pengatur konsentrasi.

The results showed that the quality of cleanliness of tableware at most food vendors did not meet the standards because it didn’t do the disinfection stage in the washing process on the grounds it would add time and costs. The use of natural ingredients is recommended as a substitute such as wuluh starfruit fruit. Septiani's research results (2017) show that rinses using wuluh star fruit solution can reduce the number of germs on cutlery.
The purpose of this study was to determine the effect of the concentration of wuluh starfruit solution (Averrhoa bilimbi) on the decrease in the number of germs on tableware. This research was an Experiment with pretest posttest with control group design. 42 samples were swiped by the device. Data collection was obtained from the results of observations and examination of germ numbers (TPC). Data analysis used Paired T-test, One Way Anova followed by Least Significance Different Test (LSD).
Laboratory tests showed that the average number of germs after treatment ranged from 2,767 - 5,567 colonies / cm² is lower than before treatment ranged 1,867 - 0 colonies / cm2. The percentage decrease ranges from 42 -100%. Concentration of 15% can reduce the number of germs in the bowl by 99,7%, concentrations of 17.5%, 20% and 22.5% by 100%. There was a significant difference in % reduction in the number of germs in the bowl in several concentrations of starfruit solution with contact time of 3 minutes. Where the 15% concentration has the largest reduction rate so it is effectively used as a disinfectant.
It is recommended that food stall managers conduct a disinfection process using wuluh star fruit solution with a minimum concentration of 15% to be applied, using running water and disposable cloths. Researchers can then vary the contact time immersion tableware or develop by making a concentration regulator.
