Pengaruh Lama Perebusan Terhadap Kadar Vitamin C Air Rebusan Daun Katuk (Sauropus androgynous)

  Daun katuk (Sauropus androgynous) merupakan salah satu tanaman yang digunakan sebagai pengobatan alternatif seperti frambusia, sembelit, memperlancar ASI dan lain-lain. Penggunaan daun katuk sebagai obat herbal umumnya digunakan sebagai minuman tradisional dengan cara merebus daun katuk dengan air dalam waktu tertentu. Vitamin C termasuk zat gizi mikro yang sangat dibutuhkan oleh manusia.Vitamin C mempunyai sifat mudah larut dalam air dan mudah rusak oleh pemanasan terlalu lama. Tujuan penelitian ini adalah untuk mengetahui pengaruh lama perebusan terhadap kadar vitamin C air rebusan daun katuk. Metode penelitianyang digunakanadalah Quasi experiment dengan rancangan penelitian Prettest-Posttest Design. Hasil penelitian menunjukkan bahwa ada pengaruh lama perebusan terhadap peningkatan kadar vitamin C dalam air rebusan daun katuk pada tiap variasi waktu perebusan secara berurutan yaitu pada perebusan 3 menit sebesar 2,109mg/g (0%), 6 menit sebesar 2,272 mg/g (7,72%), 9 menit sebesar 2,525 mg/g (19,7%), 12 menit sebesar 2,796 mg/g (32,6%), 15 menit sebesar 2,667 mg/g (26,4%). Kadar vitamin C dalam air rebusan tertinggi pada perebusan selama 12 menit yaitu 2,769 mg/g dengan persentasi peningkatan 32,6 %. Disarankan bagi peneliti selanjutnya menambah perlakuan pada sampel berupa lama penyimpanan air rebusan.

ABSTRACT 
 
EFFECT OF BOILING TIME ON VITAMIN C LEVELS OF LEAF DECOCTION WATER  (Sauropus androgynous)

Katuk leaves (Sauropus androgynous) is one of the plants used as an alternative treatment such as yaws, constipation, expedite ASI and others.  The use of katuk leaves as herbal medicine is generally used as a traditional drink by boiling katuk leaves with water in a certain time. Vitamin C is a micronutrient which is really needed by humans. Vitamin C has the property of being soluble in water and easily damaged by prolonged heating. The purpose of this study was to determine the effect of boiling time on the vitamin C content of katuk leaf cooking water. The research method used is Quasi experiment with the Prettest-Posttest Design. The results showed that there was an effect of boiling time on increasing levels of vitamin C in katuk leaves boiled water in each variation of boiling time in a row ie at 3 minutes boiling at 2,109 mg/g (0%), 6 minutes at 2,272 mg/g (7,72%), 9 minutes at 2.525 mg/g (19.7%), 12 minutes at 2.796 mg/g (32.6%), 15 minutes at 2.667 mg/g (26.4%).  The highest level of vitamin C in boiled water on boiling for 12 minutes is 2.769 mg/g with a percentage increase of 32.6%. It is recommended for further researchers add treatment to the sample in the form of storage time of cooking water.
