PENGARUH SARI KULIT BUAH NANAS TERHADAP KADAR PROTEIN PADA AMPAS TAHU

Ampas tahu merupakan limbah padat dari industri pengolahan tahu yang dimanfaatkan sebagai pakan ternak, maupun diolah kembali menjadi tempe gembus. Akan tetapi, masyarakat masih menganggap remeh hasil dari olahan ampas tahu dan mempertanyakan kandungan gizi didalamnya. Untuk meningkatkan kadar protein pada ampas tahu diperlukan suatu enzim protease, salah satu enzim protease yang digunakan dalam industri makanan adalah enzim bromelin. Dalam penelitian ini enzim bromelin didapatkan dari kulit buah nanas yang dihaluskan kemudian diambil sarinya. Penelitian ini bertujuan untuk mengetahui pengaruh sari kulit buah nanas terhadap kadar protein pada ampas tahu. Jenis penelitian ini adalah Quasi Eksperiment dengan rancangan penelitian yaitu One Grup pretest Postest Design. Bahan penelitian ini sari kulit buah nanas dan ampas tahu. Kadar protein rata-rata pada ampas tahu tanpa penambahan sari kulit buah nanas (0%) sebesar 1,791%. Setelah penambahan sari kulit buah nanas dengan variasi berturut-turut 30 %, 45 %, 60 %, dan 75 % adalah sebesar 2,137 %; 2,584 %; 2,779 %; dan 3,265 %. Berdasarkan hasil uji statistik menggunakan uji Regresi Linier Sederhana  nilai p=0,000 sehingga dapat disimpulkan bahwa ada pengaruh penambahan sari kulit buah nanas dalam meningkatkan kadar protein pada ampas tahu. Saran untuk peneliti selanjutnya adalah perlu ada variasi suhu yang berbeda, dan pH yang sesuai untuk aktifitas enzim.

ABSTRACT 
THE EFFECT OF PINEAPPLE PEEL EXTRACT ON PROTEIN LEVELS IN TOFU DREGS

Tofu dregs is solid waste from the tofu processing industry which is used as fodder, as well as reprocessed into tempe gembus. However, people still underestimate the results of processed tofu dregs and question the nutritional content in it. To increase protein levels in tofu, a protease enzyme is needed, one of the protease enzymes used in the food industry is the bromelin enzyme. In this study the bromelin enzyme was obtained from the peel of mashed pineapple and the extract was taken. This study aims to determine the effect of pineapple peel extract on protein levels in tofu dregs. This type of research is Quasi Experiment with a research design namely One Group pretest Postest Design. The material of this study is pineapple peel extract and tofu. The average protein levels of tofu dregs without the addition of pineapple fruit juice (0%) is 1.791%. After the addition of pineapple peel extract with successive variations of 30%, 45%, 60%, and 75% is 2.137%; 2.584%; 2.779%; and 3.265%. Based on the results of statistical tests using the Simple Linear Regression test the value of p = 0,000 so it can be concluded that there is an effect of adding pineapple peel extract to increase protein levels in tofu dregs. The suggestion for the next researcher is that there needs to be different temperature variations, and the pH that is suitable for enzyme activity.
