TERHADAP KADAR ASAM LEMAK BEBAS PADA MINYAK KELAPA 
MURNI

Kelapa adalah tanaman tropis yang dapat diolah menjadi berbagai macam 
produk seperti minyak kelapa murni (Virgin coconut oil). Minyak kelapa murni ini 
banyak beredar di e-commerce sehingga mudah ditemukan oleh masyarakat. 
Mengkonsumsi minyak kelapa murni yang tidak diketahui mutunya akan berdampak 
fatal bagi kesehatan, seperti tersumbatnya pembuluh darah. Menurunnya mutu minyak 
dapat dilihat dari kadar asam lemak bebas yang melebihi dari baku mutu yang 
diizinkan. Perbaikan mutu minyak dapat dilakukan dengan cara menurunkan kadar 
asam lemak bebas. Salah satu cara yang dapat digunakan untuk menurunkan kadar 
asam lemak bebas pada minyak kelapa murni adalah dengan proses adsorbsi 
menggunakan arang aktif .Tujuan penelitian adalah untuk mengetahui pengaruh waktu 
perendaman dengan penambahan arang aktif bonggol nanas terhadap kadar asam 
lemak bebas. Jenis penelitian menggunakan rancangan Pretest-Postest with Control 
Group Design. Bahan penelitian adalah minyak kelapa murni dan arang aktif bonggol 
nanas yang di aktivasi menggunakan H2SO4 1M selama 12 jam. Kadar asam lemak 
bebas diukur dengan metode titrasi Alkalimetri. Minyak kelapa murni direndam 
menggunakan arang aktif 10g dengan variasi waktu 24, 48, 72, 96, 120 jam. Hasil
penelitian menunjukkan rerata kadar asam lemak bebas sebelum perlakuan adalah
sebesar 1,3525% dan turun menjadi 0,4026% setelah perlakuan. Didapatkan hasil 
signifikansi uji regresi linear sebesar 0,000 (α < 0,05). Hasil penelitian ini 
menyimpulkan adanya pengaruh penambahan arang aktif bonggol nanas terhadap 
kadar asam lemak bebas minyak kelapa murni. Saran bagi peneliti selanjutnya agar 
meningkatkan suhu pemanasan dan konsentrasi aktivator untuk memperoleh daya 
serap arang aktif yang lebih besar.

ABSTRACT
THE EFFECT OF ACTIVE CHARCOAL OF PINEAPPLE HUMP (Ananas Comosus 
L. Merr) ON FREE FATTY ACID LEVELS IN PURE COCONUT OIL

Coconut is a tropical plant that may be made into a variety of products, 
including virgin coconut oil. This virgin coconut oil is widely distributed via ecommerce, making it easily accessible to the general public. Consuming low-quality 
virgin coconut oil can be deadly to one's health, causing blood vessel obstruction. The 
free fatty acid level exceeds the permissible quality standard, indicating a deterioration 
in oil quality. Reducing free fatty acid levels can help to improve oil quality. The 
adsorption technique with activated charcoal is one way to reduce free fatty acid levels 
in virgin coconut oil. This study used a Pretest-Posttest with Control Group Design. 
The research materials were virgin coconut oil and pineapple cob activated charcoal 
that had been activated for 12 hours with 1M H2SO4. The amounts of free fatty acids 
were measured using the alkalimetric titration technique. Pure coconut oil was steeped 
for 24 hours, 48 hours, 7 2 hours, 96 hours, and 120 hours with 10g activated charcoal. 
The results showed the average free fatty acid levels before treatment was 1.3525% 
and decreased to 0.4026% after treatment. The results obtained from the significance 
of the linear regression test of 0.000 (α <0.05). The results of this study concluded that 
there was an effect of adding pineapple cob activated charcoal to the free fatty acid 
levels of virgin coconut oil. Suggestions for further researchers to increase the heating 
temperature and concentration of activator to obtain a greater absorption of activated 
charcoal.
