PENURUNAN KANDUNGAN MINYAK DAN LEMAK LIMBAH RUMAH 
MAKAN “X” MENGGUNAKAN KOMBINASI GREASE TRAP DAN ZEOLIT 
(Dr.Tien Zubaidah, S.KM, M.KL, dan Munawar Raharja, S.Si, M.PH)

Limbah rumah makan mengandung zat organik berupa minyak lemak yang dapat 
berbahaya dan dapat berpotensi karsinogenik pada manusia. Limbah cair yang dihasilkan 
oleh rumah makan “x” berupa buangan sisa makanan yang langsung dibuang ke lingkungan 
tanpa pengolahan terlebih dahulu. Salah satu cara untuk mengolah limbah rumah makan 
dalam menurunkan kandungan minyak lemak dengan grease trap kombinasi zeolit. 
Tujuan penelitian ini mengetahui efektivitas kombinasi grease trap dan zeolit dalam 
menurunkan kandungan minyak dan lemak pada limbah rumah makan.
Jenis penelitian yaitu eksperimental dengan Pretest-Posttest With Control Group 
Design, Populasi penelitian yaitu seluruh limbah di salah satu rumah makan di Kota 
Martapura. Sampel penelitian, yaitu limbah cair rumah makan yang diambil sebagian
untuk uji coba.
Hasil analisis statistik menunjukkan nilai p > α 0,05 yang berarti data berdistribusi 
normal. Data tersebut dilakukan analisis lanjutan menggunakan uji Regresi Liniear. 
Penurunan kandungan minyak dan lemak paling efektif yaitu pada waktu kontak 110 menit 
dengan removal efficiency 66, 2 persen.
Zeolit dapat digunakan sebagai media filter alternatif yang murah dan mudah dicari 
untuk menurunkan kandungan minya lemak. Perlu adanya penelitian lanjutan yang 
memanfaatkan grease trap dan zeolit dengan waktu kontak yang berbeda.

Restaurant waste contains organic substances in the form of fatty oils which can 
be dangerous and potentially carcinogenic to humans. The liquid waste produced by the 
"x" restaurant, leftover food directly disposed of into the environment without being 
processed first.One way to treat restaurant waste is to reduce the fat oil content with a 
zeolite combination grease trap. The purpose of this study was to determine the 
effectiveness of the combination of grease trap and zeolite in reducing the oil and fat 
content in restaurant waste.
The type of research was experimental with Pretest-Posttest With Control Group 
Design, the research population was all waste in one restaurant in the City of Martapura. 
The research sample, namely liquid waste from restaurants, was taken partly for testing.
The results of statistical analysis stated the data was normally distribute. The 
data was further analyzed using the Linear Regression test. The most effective reduction in 
oil and fat content was at a contact time of 110 minutes with a removal efficiency of 66.2 
percent.
Zeolite easy to find and be able to alternative filter media is cheap to reduce the 
fat oil content. Further research is needed that utilizes grease traps and zeolites with 
different contact times.
