PENGARUH MASA SIMPAN TERHADAP KADAR KEASAMAN MADU 
HUTAN (Apis dorsata)

Sifat fisik dan kadar keasaman madu hutan menjadi salah satu penunjang 
kualitas suatu madu. Madu yang baik dapat ditinjau dari kualitas madu yang sesuai 
dengan Standar Nasional Indonesia (SNI). Oleh karena itu, penelitian ini betujuan 
untuk mengetahui kualitas madu hutan dari desa Pepara, kabupaten Paser, 
Kalimantan Timur pada berbagai masa simpan 0 bulan (Oktober), 1 bulan 
(November), 2 bulan (Desember). Parameter yang diuji pada penelitian ini adalah 
oragnoleptik dan analisa kadar keasaman pada madu. Jenis penelitian ini adalah 
quasi experiment atau eksperimen semu dan metode yang digunakan adalah titrasi 
alkalimetri. Kadar keasaman pada madu telah ditetapkan SNI minimal 50 mek
NaOH/kg, hasil pengujian kualitas madu yang didapatkan yaitu 0 bulan sebesar 
24.6930 mek NaOH/Kg, 1 bulan sebesar 29.4205 mek NaOH/Kg dan 2 bulan 
sebesar 38.80981 mek NaOH/Kg yang berarti kulaitas madu yang didapatkan di 
desa Pepara masih memenuhi Standar Nasional Indonesia (SNI). Berdasarkan hasil 
uji statistik Regresi Linier Berganda pada tabel ANOVA untuk mengetahui 
pengaruh variabel bebas terhadap variabel terikat, didapatkan nilai signifikasi < α 
(0,000 < 0,05). Sehingga dapat disimpulkan ada pengaruh masa simpan terhadap 
kadar keasaman madu hutan. Peneliti selanjutnya disarankan untuk melakukkan 
pengukuran kadar gula preduksi, kadar air, kadar abu, dan Hydorxy Methyl 
Furfuraldehyde (HMF). Saran kepada konsumen sebaiknya madu tidak disimpan 
lebih dari 3 bulan.

ABSTRACT
EFFECT OF STORAGE ON ACIDITY LEVEL OF FOREST HONEY (Apis 
dorsata)

The physical properties and acidity of forest honey are one of the supporting 
factors for the quality of honey. Good honey can be seen from the quality of honey 
in accordance with the Indonesian National Standard (SNI). Therefore, this study 
aims to determine the quality of forest honey from Pepara village, Paser district, 
East Kalimantan at various storage periods of 0 months (October), 1 month 
(November), 2 months (December). The parameters tested in this study were 
oragnoleptic and acidity analysis in honey. This type of research is quasiexperimental and the method used is alkalimetric titration. The acidity level in 
honey has been determined by SNI of at least 50 mek NaOH/kg, the results of the 
honey quality test obtained are 0 months at 24.6930 mek NaOH/Kg, 1 month at 
29.4205 mek NaOH/Kg and 2 months at 38.80981 mek NaOH/Kg which means 
quality. honey obtained in Pepara village still meets the Indonesian National 
Standard (SNI). Based on the results of the Multiple Linear Regression statistical 
test in the ANOVA table to determine the effect of the independent variable on the 
dependent variable, the significance value was < (0.000 < 0.05). So it can be 
concluded that there is an effect of shelf life on the acidity of forest honey. Further 
researchers are advised to measure reducing sugar content, moisture content, ash 
content, and Hydorxy Methyl Furfuraldehyde (HMF). Suggestions to consumers 
that honey should not be stored for more than 3 months.
