Makanan jajanan adalah salah satu jasa pelayanan masyarakat. Namun, keberadaannya dapat menjadi masalah apabila higienitasnya tidak terjaga sehingga akan sangat berisiko terhadap cemaran yang dapat menganggu kesehatan. Es dawet merupakan minuman jajanan yang penyajiannya di lokasi berjualan. Es dawet dapat terkontaminasi oleh mikroorganisme seperti bakteri, jamur, dll sehingga memerlukan standar tertentu untuk menjamin kualitas. Melihat potensi bahaya dan tingkat kerawanan yang cukup tinggi maka perlu diupayakan pengawasan kualitas pengelolaan makanan jajanan.
	Tujuan penelitian adalah untuk menganalisis faktor-faktor yang berhubungan dengan angka kuman pada minuman es dawet. Jenis penelitian adalah analitik dengan pendekatan cross-sectional. Populasinya adalah 21 pedagang es dawet di Kota Banjarbaru. Teknik pengambilan sampel dengan metode saturation sampling. Instrumen yang digunakan lembar observasi dan pemeriksaan laboratorium. Analisis data dilakukan secara univariat dan bivariat (Spearman).
	Hasil penelitian menunjukkan ada hubungan yang signifikan antara kebesihan peralatan dan sarana penjaja dengan angka kuman pada minuman es dawet, sedangkan tidak ada hubungan yang signifikan antara personal higiene penjamah makanan dan penyajian es dawet dengan angka kuman pada minuman es dawet.
 Saran yang diberikan kepada pedagang adalah diharapkan untuk selalu memperhatikan dan meningkatkan kepedulian terhadap higiene sanitasi yang baik terutama dalam hal kebersihan perorangan, kebersihan peralatan, proses penyajian dan sarana penjaja.

	Snack food is one of the community services. Its presence, however, can become a problem when the hygiene hasn't been maintained so it will be very risky for contamination that can interfere with health. Ice dawet is a snack drink served at selling locations. Ice dawet can be contaminated by microorganisms such as bacteria, fungi, etc. requiring a certain standard to ensure the quality. Given the potential for danger and a high level of vulnerability, it is necessary to monitor the quality of food management. 
This research was aimed to analyze the factors associated with germs in ice dawet. The type of this research was analytic through a cross-sectional approach. The population was 21 ice dawet traders in Banjarbaru city. The sampling was saturation sampling method. The instruments used were observation sheets and laboratory examinations. The data were analyzed univariate and bivariate (Spearman).
The results showed as follows there was a significant relationship between the cleanliness of the equipment and facilities of the vendors with the number of germs in the ice dawet drink, while there was no significant relationship between personal hygiene of food handlers and serving of ice dawet with the number of germs in ice dawet drinks. 
The advice given to traders is expected to always pay attention and increase awareness of good sanitation hygiene, especially in terms of personal hygiene, cleanliness of equipment, serving process, and hawker facilities.
